Join in with Alzheimer's Society Cupcake Day 2021

I have personal reasons to want to share and promote the work that the Alzheimer's Society does to campaign and support those living with dementia.  There is no doubt that the coronavirus pandemic has badly impacted anyone with dementia and their families.  I am a member of a support group on Facebook and I am shocked by the daily stories of decline and distress and the ongoing fight to visit loved ones and get the right care.   And of course the Governments silence on their promise to fix social care is a scandal.

Dementia is set to be the 21st century's biggest killer and affect 1 million by 2025.  

I am therefore joining in with the Alzheimer's Society Cupcake Day on 17th June 2021.

The much needed funds raised will help the Alzheimer's Society reach more people through their vital support services.   My father and I have had direct benefit from these services, both in person and via their helpline.  I am so grateful for their invaluable advice and support which has enabled me to find a way through the care system and make sure I get the very very best for my mother.

More information on Cupcake Day: 

Alzheimer’s Society’s Cupcake Day is back for its sixth year running, so it’s time to heat up your ovens, grab the over ripe bananas and get involved on the 17th June 2021. 

2020 has seen a huge rise in baking. With more time being spent at home, lots of us have been practicing our tray bakes and lemon drizzles to perfection. It’s now time to put those efforts to good use.

Whether you organise a delivery ‘drop off’ of goodies to your neighbours, host a driveway bake sale in your area or have a virtual ‘bake-off’ with colleagues, friends, and family, you will be helping to raise money to support the 850,000 people living with dementia in the UK. 

By dusting off your pastry-stained cookbook and getting involved in Cupcake Day, you will be helping us reach more people through our vital support services, like the Dementia Connect support line. Our services have been used over 3 million times since March 2020 and have been a lifeline to thousands, but there are so many more who urgently need our help.  

People affected by dementia have been left severely impacted by coronavirus and never needed our help more. As well as people with the condition being the worst hit in terms of deaths, we’re hearing daily from people who are seeing their symptoms increase, mental health decline and family carers in complete despair. 

So whether you’re a piping queen or baking newbie, we are encouraging everyone to have a go and raise vital dough-nations for this fantastic cause.

Double Salted Caramel Cupcakes | Cupcake Day 2021
Double Salted Caramel Cupcakes

This is the recipe I have chosen to bake on 17th June (you can join in on any day though)... will you join me and share your pictures on instagram stories (details below).  Disclaimer ... my cupcakes will not look like these ones!!!

​Double salted caramel cupcakes
Makes 12
 
200g unsalted butter, softened
200g golden caster sugar
3 eggs, beaten
200g self-raising flour
1-2 tbsp milk
35g salted caramel sauce
 
For the icing -
160g unsalted butter, softened
300g icing sugar
3 tbsp salted caramel sauce

  • Preheat the oven to 180°C, 160°C fan, gas mark 4.  Line a 12-hole muffin tin with paper cases.
  • Place the butter and sugar in a mixing bowl and beat together until light and fluffy.
  • Add the eggs and flour a little at a time, mixing after each addition.  Add the milk, and mix well to give a smooth batter that drops easily off the spoon.
  • Spoon half of the mixture into the paper cases then top each one with ½ tsp of salted caramel sauce.  Cover with the remaining cake batter then bake for 20-25 minutes, until golden.
  • Remove from the tin and leave to completely cool on a rack.
  • Meanwhile, make the butter icing by beating together all of the ingredients, reserving 1 tbsp of the salted caramel sauce. Spoon into a piping bag and pipe over the cupcakes.  Drizzle over the remaining caramel sauce.
